Filter-Led Menu

Filter coffee anchors the RoastDrive menu because it reveals roast decisions with clarity. V60 pours are served at the bar with rest dates printed on the board — typically three to five days off roast for washed lots, sometimes longer for dense naturals. Batch brew fills weekday mornings with a profile tuned for refill stability without turning bitter by ten o'clock. Water temperature, grind and pulse structure are adjusted when humidity shifts across Singapore's wet weeks. Menu cards list elevation, process and atlas tasting language in plain English. Indicative prices: V60 from S$7, batch brew from S$5, with seasonal lot surcharges noted when applicable. Ask the bar team which lot opened today; we would rather delay service an hour than pour a cup that has not finished resting.

Espresso Daily

Espresso runs daily on a rotating dial chosen for balance in milk and black service — not for maximum bitterness scores. The team pulls test shots each morning after verifying rest windows; if a lot still tastes tight, it stays filter-only until the atlas entry updates. Milk drinks include flat white, cappuccino, cortado and piccolo with texture trained toward satin integration rather than stiff foam caps. Plant milks are available with the same standards. Indicative prices: espresso from S$4.50, milk drinks from S$5.50. We do not claim every shot will match your home machine or taste identical across humidity swings — we do claim each dial is tasted before the door opens and removed when it no longer represents the batch honestly.

Seasonal Roast Batches

Seasonal batches are small roast runs tied to importer arrivals — often Central and South American washed lots in one season, East African naturals in another. Each batch receives an atlas code, roast date and rest recommendation before retail or filter service begins. Bags are sold whole bean with handwritten open dates; when a lot sells through, the shelf empties without silent substitution. Indicative retail: 250 g from S$22, 500 g from S$38 depending on origin cost. We rotate frequently rather than holding stale inventory. Guests who follow a particular farm should ask to be notified when a related lot lands — we keep a simple email list at the counter, not an automated points programme.

Cupping Notes Board

The cupping notes board is public-facing hospitality, not a score competition. When the team cups a lot at rest, descriptors migrate to the board within a day: stone fruit, cocoa nib, herbal length, and so on. We include caveats when a batch is still opening or when filter and espresso readings diverge. Monthly board archives live in a binder at the bar for guests who want to compare how a seasonal line evolved. There is no numeric rating system designed to impress investors — just language you can test in your cup. During busy service the bar team will read the board aloud if you ask; quiet mid-mornings are best for longer conversations about process and rest.

Light Food & Brunch

Light food and weekend brunch plates are composed to sit beside bright cups rather than mask them. Morning options include sourdough toast with seasonal toppings, granola with yoghurt, and egg dishes with herbs and salad. Pastries arrive from local bakeries who share our not-too-sweet approach. Indicative range: S$8–S$18 per plate. An allergen sheet stays at the counter and updates when recipes change; please disclose nuts, dairy or gluten needs when ordering — we prepare food in a shared kitchen and cannot guarantee zero cross-contact. Brunch peaks Saturday and Sunday 09:30–11:30; arriving before nine or after noon usually means shorter waits and calmer tables.

Small Wholesale & Event Brew

Small wholesale serves offices, studios and neighbourhood events within reasonable delivery distance of Upper Thomson. Minimum orders typically start at six retail bags or two batch brewers' worth of ground coffee, with rest dates coordinated to your service window — we will delay shipment rather than send beans that need two more days. Event brew bars include batch brew, optional V60 station and printed atlas cards for guests. Indicative event pricing from S$280 for a half-morning session excluding beans, which are billed at retail lot rates.
